1 + 1 = simple syrup

Just as the name states this is SIMple! And once it’s in your fridge you will find it so useful, especially in summer! Ice coffee, gin gin mules, salad dressing, marinades, did I mention mojitos? It adds sweetness without the grit – grit is never good even when it’s sweet grit.

If you haven’t tried it and you like a little sweet in your ice coffee I’m betting you’ll quickly find yourself on the “SS Mission” with me (yes, that’s Simple Syrup Mission). I can’t stop myself from “mentioning” to coffee shops, big and small, that they have a responsibility to have simple syrup available if they serve ice coffee. No More Grit! No More Grit!


OK, back to our real mission today. Make a batch of simple syrup and keep it in your refrigerator in a mason jar or glass pitcher and you’ll be all set for sweetening. You can double, triple, or increase as needed based on the size of your jar but word of caution if your jar just fits 3 cups of water it won’t fit 3 cups of simple syrup (go for 2 + 2 cups only).

  • Sugar - 1 cup
  • Water - 1 cup
  1. Boil water
  2. Pour into a heat safe jar / pitcher (I always pour hot liquids over the sink)
  3. Pour in sugar (I also always pour sugar over the sink)
  4. Stir continuously until all sugar has dissolved
  5. Let cool
  6. Cover with lid or top
  7. Keep refrigerated
