Salmon and I haven’t always been friends. There was a stretch I was ordering it at restaurants near and far to try to find a “version” I liked without much success. Did my palette change, maybe.  Did I just not try the right type or recipe, maybe. Either way we are now buddies and this grilled salmon with dill marinade and sauce recipe was such a success there wasn’t any left for salmon salad the next day (so for the salad recipe we will have to wait).

The marinade can be whipped up in advance but don’t marinate the salmon for too long – I recommend letting it sit for about 1 hour in the refrigerator before putting it on the grill. If you have one available using the food processor to mix up the marinade makes things easy but shaking or stirring once all marinade ingredients are combined works too (just remember to finely chop the dill and crush the garlic if you’re doing it this way). If you’re a dollop follower you know I love the ziploc for marinating! So into the quart size bag the salmon and marinade go. Zip it and flip it a few times over the course of the hour. A shallow dish works for this marinating step as well.

Using the cedar board requires a little pre-planning (it has to soak in water for a few hours before it can go on the grill) but makes for easy grilling and avoids the “grill stick” that has taken down many a filet. You know when the fish sticks to the grill grate as you try to turn it and proceeds to fall apart and into the coals which equals a dinner of vegetables only. The metal fish grill holders work to avoid this sticking and can be used for this recipe too but the boards add a nice flavor.

the sauce

The salmon has great flavor once it’s been marinated and grilled so the sauce is optional but does round out the flavors nicely. My eaters preferred the salmon with a dollop of sauce and enjoyed the sauce so much that they also added it on top of the grilled potatoes that I served with the fish.

The sauce can be made in advance and stored in the refrigerator for a few hours. Because I like to cut down on inside time when it’s nice out and clean up time, well always, as soon as I’m finished making the marinade I give the food processor a quick rinse and make the sauce in there. All the ingredients go in at once and puree until it’s smooth and fully mixed. This too can be made in a bowl just finely chop the dill before adding and whisk thoroughly.

Ingredients
  • For the marinade
  • Olive oil – ⅛ cup
  • Garlic – 3 large cloves
  • Dill – ¼ cup chopped
  • Lemon juice – ¼ cup
  • Black pepper – ½ teaspoon
  • Salmon - 32 ounces
  • 1 cedar gill plank
  • For the sauce
  • Dill – ⅓ cup
  • Horseradish – 2 teaspoons
  • Sour cream – ½ cup
  • Olive oil – ⅛ cup
  • Lemon juice - 1 tablespoon
Instructions
  1. For the marinade
  2. Combine first 5 ingredients in food processor and puree
  3. Put salmon in ziploc bag and pour in marinade
  4. Refrigerate salmon in marinade for up to 1 hour flipping bag 2-3 times
  5. Soak cedar board in water for a few hours (according to directions on package)
  6. When ready to grill remove salmon from bag and place on cedar board
  7. Place on grill and cook until salmon is completely cooked
  8. For the sauce
  9. Combine all ingredients in food processor and puree
  10. Refrigerate until ready to serve
  11. Pour a dollop on individual salmon servings
