spaghetti squash

Serves: 4 - 6 servings as a side
  • spaghetti squash - 1 medium
  1. Cut the squash in half lengthwise
  2. Scoop out the seeds and discard
  3. Place the two halves cut side up in a shallow corningware or similar microwave safe dish
  4. Add 1" of water to dish
  5. Put the dish in the microwave and cook on high for about 15 minutes or until squash is soft when the inside is poked with a fork
  6. Remove from microwave
  7. Carefully remove the squash halves from the dish (remember it's hot!)
  8. Using a fork gently scrape the sides to get spaghetti like strings of squash
  9. Scrape the squash until all squash meat is out and just the outside shells are left, discard the shells
  10. Serve
