baked fish stuffed with spinach & feta

Serves: 4 servings
  • Fish filets – 4
  • Spinach – fresh, 1 bag (6-8 oz)
  • Garlic – 4 cloves, crushed
  • Olive oil – 1 tablespoon
  • Feta – ½ cup crumbled / chopped
  • Nutmeg – 1 dash
  • Salt and pepper
  • Cooking spray / olive oil (for pan)
  • Lemon - 1 zested
  • Toothpicks (oven safe)
  1. Preheat oven to 350°
  2. Wash and pat dry spinach
  3. Peel and crush the garlic
  4. Pour olive oil into a large sauté pan and add crushed garlic
  5. Sauté garlic until it is light brown
  6. Add spinach and stir so all leaves are tossed in garlic and oil
  7. Stir frequently for 2-3 minutes until spinach starts to wilt, do not over cook the spinach
  8. Carefully remove from heat and transfer spinach to a large mixing bowl
  9. To the bowl add chopped feta, salt and pepper to taste and a dash of nutmeg
  10. Stir mixture thoroughly and set aside
  11. Pat fish filets dry with a paper towel
  12. Lay 1 filet flat and put ¼ of the mixture towards the top of one filet
  13. Gently roll the filet (starting at the top where the stuffing is) and secure with 1-2 toothpicks
  14. Repeat for other 3 filets
  15. Coat the bottom of a baking dish with cooking spray or olive oil
  16. Place the filets in the coated pan seam side down
  17. Zest 1 lemon
  18. Sprinkle the lemon zest and a little pepper on top of each filet
  19. Bake fish in the oven for 15 – 20 minutes or until the fish flakes easily with a fork and is cooked through
  20. Serve immediately
